Peach Freezer Jam

My friends have a peach tree that was LOADED with peaches this year. I didn't have tons of time to can them, but I spent all afternoon Saturday freezing them and I made a couple batches of yummy freezer jam.

Fresh off the tree...

Blanching... Ice cold water to remove the skins...
Sugar and pectin...
Jam!!! (Now I just need to make some bread...)

That sounds like something I would do! Once we traveled to and from the mountains of New Mexico to North Texas - and I bought a huge amount of apples - the culls, i think they called them. Apples that were culled and couldn't be sold for eating, but for making apple butter, pies, etc.

Anyway, I made a large amount of apple butter that year!

My husband actually loves PEACH butter! His grandmother used to make it from her own trees' fruit.

I have an extra bedroom you could stay in since Lindsey moved to Uganda. Let me know....
